Sample: sound (cymbal hit, snare, etc.)
Pattern: a pack of samples for a given time frame
Playlist: a pack of pattern that actualy are making the song.
As I'm only used to FL4, I don't know much about FL5 (and express) and recording guitar IN FL since I only used it to make drum track.

If you have any questions go ahead as FL5 is not so different from FL4, it just have the guitar recording thing in it which I never used though. I like to use
Adobe audition 1.5 so far to record multi-track stuff.
