recording with a midi piano?

I am a pianist and teacher and would like to record music from my Yamaha PF-500 electric piano. I already have a computer with Allegro and a MIDI interface cable. What software do I need and how is it connected to the keyboard to record without mics? Also, I have been looking at sound libraries in the hope of improving the piano sound. How do these work? Do I need additional hardware to play these sounds from the keyboard?
