How do virtual instruments work? (Newbie)

Could anyone tell me how virtual instruments are sampled... I've listened to a lot of expensive digital pianos etc and i find that they clearly seem to modify sample amplitude - which makes a lot of sence but gives an effect of an innapropriate amount of chiff (that might just be an organists' word! the first sort of hit sound of a musical note" - do most samples take a hit note and a prolongued loop section which is decayed for things like piano or is there also independant control over the chiffs' lenght etc??
