getting volumes in all tracks the same

I've been recording about 10 years. I use 2 Tascam DA38's to record. I mix down using Adobe Audition.
I do about 1 project weekly but I work hours trying to get all tracks near the same level.
I record mostly Bluegrass and Southern Gospel
